Grilled Pork Chops with Rhubarb Sauce

This is a great quick dinner option – make the savory rhubarb sauce in the microwave while the pork chops cook!

Ingredients

  • 1 tablespoon fresh thyme leaves, chopped (or ½ teaspoon dried)
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt, divided
  • ½ teaspoon fresh ground pepper, divided
  • 4 bone-in pork chops (about 2 lbs each), trimmed
  • ½ cup 100% pomegranate juice
  • ½ cup reduced-sodium beef broth
  • 2 tablespoons honey
  • 3 medium shallots, thinly sliced
  • 1 ½ cups sliced rhubarb, fresh or frozen (thawed and drained)
  • 1 teaspoon butter

Preparation

  1. Preheat grill to medium high.
  2. Combine thyme, oil and ¼ teaspoon each salt and pepper in a small bowl. Smear evenly over pork chops.
  3. Combine juice, broth, honey, shallots and the remaining ¼ teaspoon each salt and pepper in a glass pie pan. Microwave uncovered on high until reduced by about half, about 6 to 9 minutes. Stir in rhubarb and microwave until the rhubarb begins to break down, about 3 to 6 additional minutes. Stir in butter.
  4. Meanwhile, oil the grill rack. Grill the pork chops, turning once, until cooked through, about 2 to 3 minutes per side. Serve with sauce.
