Recipe: Chicken Taco Fiesta Dip

Here’s a festive way to use leftover chicken. Chop and combine it with cream cheese, sour cream and taco seasoning mix to make a tasty dip that’s perfect for parties.

Chicken Fiesta Dip
32 servings, 2 tbsp each

Ingredients:
– 4oz. (1/2 of 8-oz. pkg.) cream cheese, softened
– 1 cup reduced fat or light sour cream
– 1 pkg. (1 oz.) taco seasoning mix
– 1-1/2 cups chopped cooked chicken
– 1 cup finely shredded, Mexican-style, four cheese blend (2% milk)
– 4 green onions
– 1 tomato, chopped
– 1/4 cup sliced black olives

Directions:
– Heat oven to 350°F.
– Mix first 3 ingredients in medium bowl. Stir in chicken, 1/2 cup shredded cheese and onions.
– Spoon into 9-inch pie plate or 1-1/2 quart casserole dish sprayed with cooking spray.
– Bake 25 min. or until heated through. Top with remaining shredded cheese, tomatoes and olives.

Serve with wheat crackers and a variety of colorful vegetables, such as red and green bell pepper strips, carrot sticks or celery.
